Brocolli! Why it is an essential vegetable

I don't know whether the Vit A is stored as Vit A in the vegetable or only as beta-carotene but if you're eating a lot of broccoli then beware eating much liver and hold off on any cod-liver oil. You can overdose on Vitamin A (retinol).

Beta-carotene is safe in the respect that you can't OD on it but has been linked to cancer in smokers. Apparently, it can act as the complete opposite of an anti-oxidant under some circumstances.

Statistically people in the US only get about 10-15% of their much needed vitamins/fiber/anit-oxidants per day, so I don't see many of them being able to overdo it.

btw...Brocolli is also good for the monthly body detox/cleanse.

dude i always eat brocoli another good carb is to eat PLAIN oatmeal I always eat plain oatmeal in just about every meal and I add in spinach or brocli or carrots or fruit RAW i eat all my vegetables raw. Sometimes I eat the potatoes raw 2 but most of the time wiht potatoes I cook em in microwave.

It's a bad idea to make a habit of eating potato raw. Parts of the plant contain an alkaloid, solanine, and can be lethal.

accutane!

I thought you'd written "Aquitane" for a moment. That's fighting talk to us Brits. :)

Yes, though, isotretinoin, the active in accutane, is a synthetic derivative of retinol.

Not too relevant to most of us but note that retinol and pregnancy are a very bad combination.

well, get ready to pay a little more it. due to the global warming in calif, veggies are going up a little but some citrus will be 2 to 3x higher. our broccoli will have a purple cast to it but will still be ok to eat. :)

nice article... i think broc is over rated though... my moms friend had breast cancer and they told her to eat raw broc. she ate it everyday and still got it bad... soo.....

the cooking, if not overdone, helps free up the ingredients so it is easier to digest and more easily absorbed
