Breakfast Egg Recipes...Let's hear em...

So I'm talking mostly omelettes I suppose, but whatever wonderful scrumptious meal you make for breakfast with eggs, do tell. I am sick of just scrambled eggs and hear about many wonderful omelettes people make, but am looking to hear what you broski's and brolette's have going.

Chicken Omelette with veggies
Veggie & cheese omelette
Beef & onion omelette
Beef & veggie omelette
Mexican (veggie & salsa & cheese or no cheese)
Scrambled eggs +/- cheese on a tortilla +/- ham/chix/beef +/- veggies

I use whatever I have on hand, cuz I always have leftover veggies.

Today, I had a chicken omelette cuz I had a little leftover chix & used peppers & fried onions in it......

An Asparagus & tomato omelette is good too....

spinach and feta cheese ommelete are my faves!

Todays breakfast omelete:
Egg Starts (fat free eggs in a carton)
brown rice
spinach
mushrooms
feta cheese

7 whites and 2 yolks in a cup.

8 raw homogeneous egg whites. just gulp it down as if it was milk. best part is that i don't have to clean up the mess afterwards, just toss the carton into the garbage.
