You need to start keeping a food log. track what, how much, and when you eat. I'd be willing to get that 'eating a ton' for you is about 2000 calories. When you say that your diet could be better I'm thinking that you probably are this guy:
wake up you aren't hungry so you don't bother with breakfast
around 12:00 you are starving so you eat a value meal from McDonalds:
Quarter Pounder w/cheese: 500 calories
Large French Fries w/Ketchup: 600 calories
Large (oh so healthy) DIET coke: 0 calories
Total 1100 Calories
1100 in 1 meal by any scale is a very good sized meal. You just ate a LOT of food so you are on track to gain some weight here
4pm comes around and you are still not hungry cause you ate so much at lunch
6 pm... it's been 6 hours and you are starving again . . .
Time to eat some Lasagna and garlic bread and salad. Good 'healthy' meal and you even have 2 pieces!
lets say about 1000 calories for this meal..
11:00p.m. sleeepy not hungry so you go to bed..
let's recap the day...
no breakfast
lunch = huge fatty/sugary meal for a whopping total of 1100 Cal
Dinner = good amount of food here for 1000 Cal
Total for the day 2100 Cal
at 140 lbs you need ~ 1700 Cal to maintain your weight.
Factor in working out, naturally having a high metabolism and you may only be getting a few calories over your daily expendature. Barely enough to gain anything.
Do this and I PROMISE you will gain weight.
eat 6x/day Whole food
7:00 Breakfast - First meal as soon as you wake up (~600 Cal)
9:30 (~450 Cal)
12:00 (~500 Cal)
2:30 (350 Cal)
5:00 (350 Cal)
8:00 (500 Cal)
Total Cal: 2750
Now toss in a 600 Calorie weight gainer shake after your workouts and on training days you are taking in almost 2x the amount of calories you need in a day.
This should be a minimum to start out and should help stretch your stomach a bit so you can get up to 4000Cal/day to do some serious weight gain.
Those calories should be made up of:
at least 200g protein get some EFA (Essential Fatty Acids) in there from things like fish and nuts, and complex carbs (whole wheat pastas and breads, sweet potatoes, maltodextrin)
