Here is a great way to prepare baked potatoes:
Wash the potato and shake dry it (make sure it is still wet). Wrap the potato in heavy duty saran wrap and place in the microwave for 4-6 minutes depending on the size of the potato. After the time is up, leave the potato in the saran wrap and wrap it in a dish towell for 2-3 minutes. Then place back in the microwave for 4-6 minutes again (typically a minute or two less that the first round of heat). After the time is up, pick up the potato in the saran wrap with the towell and squeez it--you'll feel it break apart from the peeling, you'll know when it's done! Unwrap it, cut it in half, add a little butter or butter buds, add some lowfat or nonfat cottage cheese (delicious on baked potatoes), salt, slice of diced turkey, chives, and salsa. Enjoy!!! Trust me, this makes a damn good potato in no time.
