My absolute favorite that i never-ever-ever-ever-ever subtitute is an asain mixture. Mix dijon mustard (i prefer the classic one with the mustard beans in it or you can mix the creamy with depending on mood), garlic, little olive oil, and little honey. bat that around spread on one side bout 10 -15 before grillin, lay salmon (scale side) down for about 3-4 min. when u go to flip the skin will come right off while the salmon stays intact, repeat the layering of mixture on the other side and then pull in about 3 min. the fish will still be cooking when u take it off so it won't be dry. the ingredients go in order from most to least, there is a recipe for exact meseaurements but i'm to lazy to get it and i like to just taste it out before applying anyway. also i like my fish a little rare in the middle so cooking time is to your discretion. the fish can also be baked, broiled in the oven with same results but no flippin occurs but the skin still stays on and again when cooked the fish comes right off th skin.
