What are the thoughts about Xanthan gum used as a thickener? I used it recently and am just concerned about its digestibility.
Any other suggestions for a thickening agent?
I can try cornstarch, Its just amazing to me the consistency that a tiny bit of xanthun gum makes my protein shakes.. creamy like a milkshake.

Just from a personal perspective, I have problems with all of the gums used as texturizers, but I'm a sensitive celiac. The way it manifests, for me, is with "intestinal flares" (major pain, general uh, intestinal problems, kind of unpredictable). I can have something with carageenan or xanthan gum in it once or twice a week, but not once or twice a day.
