Who makes a killer meatloaf?

oh man, my ex used to make awesome meatloaf. eggs and oatmeal in there, i remember. damn.

Thats where I messed up...I didnt put any bread type stuff in there. Fell apart on the plate, so I put it in a bowl and ate it with a spoon.

I've been told I make a very good meatloaf:

1.5 lb of meatloaf mix
3 or 4 slices of bread
2 eggs
1 packet of lipton beefy onion soup mix
4 ounces of monterey jack cheese cut into small cubes
Ketchup (about 1/3 cup or so) OR 1 can tomato Paste OR canned diced tomatoes, whatever turns you on
Add milk if the mix is still too dry/thick to mix

Preheat oven to 350. Bake in a greased loaf pan for AT LEAST 1 hour (check the internal temp, I eyeball it but I've been cooking meatloafs for 20 years or so). You'll want to put the loaf pan on top of a baking sheet, sometimes it gets pretty juicy.

As with all meat, you need to allow the loaf to rest AT LEAST 15 minutes after you take it out of the oven (30 are better) before serving or it's just gonna be a soupy mess.

You could also add:
wheat germ or wheat bran
precooked rice
oatmeal
cooked/pureed vegetables

The original purpose of meatloaf was really to extend the hamburger, stretch about a pound of meat to feed a family of four AND have some left overs for later, so yes, you add bread, oatmeal or other cereal grains (but precooked).

Yeah Ive heard that a few times before, that eggs ruin a meatloaf. I can say from experience so does using lowfat meat, mine came out a brick.

So just post up a good recipe mr Chef Boyardee.

Meatloaf is sort of regional, IMO, and generally speaking most of us like meatloaf that tastes like dear old Mom made :qt: (unless Mom couldn't cook for shit)

ok lets say youre using 5lbs of meat.
you want 3lbs beef and 2lbs ground pork.
put the meet in a bowl.
add this
8 tblsp A1 souce
2 tblsp beef bass I like prasteen
2 tblsp ms dash
1 tblsp salt see salt is the best
3 tblsp basil
3 cloves frash garlic
1 cup some times more of italen braed crums.
half cup vidalia onions. vidalia onions are sweet and beleave me they are the best for a meat lofe
1/4 cup milk.or creem if you dant care about fat
2 tblsp soy soce
2 tblsp wostershire soce

mix this all up.if it feels to mushy add some brad crums.
"do not over mix though this will fuck it all up.
once you have a pritty good cansistance throw it all on the pan you are going to cook it on.make shore you grees pan.
then just look at it.if it is realy falling apart and you cant get it to hold.crack 1 egg and crush it in youre hands spread it all over the meat lofe.rub it around and around you will feal it start to come togather and start to hold.
you will know when it is where you want it.

if it is allready holding pritty good just use water to seel it the rest of the way.
you want the end product to me verry smooth on the out side.
cover and cook for 10 minets at 350 then on cover and cook fore anther 25 minets.if you dont cover for the first 10 minits it will dry out.

and that my friends is a bad ass meat lofe. ;)

Needto ... HOW can you have 5+ lbs. of meat cooked in 35 minutes??? What shape do you have it formed in??? Is it spread out on a cooking sheet or what???

The recipe I gave fills a bread loaf pan right to the top, and that's under 2 lbs.! OMG, what do you cook it in?

I lever cook in a louf pan.allways on a sheet pane.yes in a louf pan it takes longer.

1.5 lbs. ground beef and pork (.5 &.5)
1/2 onion chopped
2 cloves garlic minced
.5 lb mushrooms chopped
1 tbsp minced fresh rosemary
.75 c milk
1 c oatmeal
3 strips bacon


Sautee onion, garlic, mushrooms, & rosemary until soft. Let cool. In a big bowl, mix the hell out of everything, add salt & pepper to taste. Form a loaf in a 13" x 9" dish, place bacon strips on top. Mix equal parts mayo & dijon mustard in a bowl with a few shakes of cayenne pepper (ground). Brush it over the meatloaf, and cook @ 375 until done.

Thank me later, just not quite as low fat as you'd like from a fitness site.
 
I can't believe out of 70 posts, no one suggested Italian Style meatloaf (the only way to eat it IMO)

That was possibly the best meatloaf I have ever tasted. I mean I couldn't stop eating it. Everything was exactly as you said it would be.

my mom makes a mean meatloaf too
yummy
mine sucks but this is what i use
beef, lipton onion soup mix, lots of crackers, salt pepper, ketchup or tomato sauce or both
warm water and one egg and mix it all up and flop it in a pan and cook it till it looks done
and then flop it on a plate and ring the dinner bell
oh and with the leftovers
its meatloaf sammiches for a week yummy

4 ounces sharp/old cheddar, shredded (opt)

bake 375 for 50-60 minutes til it pulls away from sides of pan and when pricked with a toothpick the juices run clear

i have also firmed this into the bottom of my slow cooker and had it turn out pretty good in a few hours
