All of this stuff you mentioned is snack food. It's not the main food stuff that the average person eats at home.
Tofu is not a big part of the diet. Just go to Japanese restaurant and see if tofu is a main course. It's not. It's used in small amounts in soups. It's only Americans that eat the stuff with their rice cakes that use it a lot.
You can go to a Chinese restaurant and find Mabo Tofu or Tofu with black mushrooms but those are delicacies that are not eaten very much. The main diet in Japan and China is rice and vegetables or noodles and vegetables. Some times there will be a little fish or pork, beef is very rarely eaten because it costs a lot. If you do find some soy product it will be so small you can put all of it in your soup spoon.
Trust me I've lived there. I was a student at BeiDa, that's the university were the students came from that protested in Tien An Men. And I can tell you the beer in BeiJing is better then the beer in Tokyo. And the best Mabo tofu I have ever eaten was at a little restaurant with a dirt floor on ChenFu Rd near the corner of ChenFu and XueYuan Rd in BeiJing.
