what about the fat that cooks out of red meat?

That is just not too significant, I would subtract maybe 10-30 cal tops, even that would be an overstatement. (a lot of it is water mixed w/ the fat)

Where do I get one of these scales? I want to be able to weigh how much chicken I'd be eating. A serving is like 3-4 oz. I believe, so I wanna be able to pretty accurately measure what I'm taking in. This could be useful.

In north america, Walmart sells some cheap scales...

Depends where you live I guess. Most department stores should carry them (as should most health food stores).

yep got me a cheapie from wal-mart for like 4 or 5 bucks. I've been weighing my food cooked as well. A Hamburger at 6 oz. raw will cook down to 4 oz. cooked. So am I eating 6 or 4 oz. of hamburger?

6 OZ.!
Like I said before, ONLY the uncooked weight counts.

I don't weight my food and I don't weight myself either. I always go by instinct and what the mirror tells me. :supercool
