Vinylgroover & SPANAKORIZO

This is all I could find that looked right

1 cup water
1 medium onion -- finely chopped
2 cloves garlic -- minced
1 teaspoon dried oregano -- crushed
1 teaspoon chicken bouillon granules
1/2 teaspoon lemon peel -- finely shredded or 1 tablespoon lemon juice
1/8 teaspoon pepper
1/2 cup long-grain rice
5 ounces frozen spinach -- thawed and drained
lemon peel -- optional
In a medium saucepan combine water, onion, garlic, oregano, chicken bouillon granules, lemon peel or juice, and pepper. Bring to boiling. Stir in rice; reduce heat. Cover and simmer for 10 minutes. Stir in spinach. Cover and cook for 5 to 10 minutes more or till rice is tender and liquid is absorbed. Stir lightly with a fork before serving. Garnish with lemon peel strips, if desired.

just so you know, everytime i have had it im fairly sure the onion and garlic are fried in a bit of olive oil first

needed something to get away from the politics debates.........pheww.

Looks good, although chicken buollion shouldn't be used strictly speaking as it's supposed to be a vegan dish. The dish is supposed to have a slightly bitter taste to it, but i'll leave it to your personal taste.

It is also widely made with basmati rice if you like it.

Otherwise, looks good.

You're quite brave........spanakorizo can be an aquired taste for many.

Only if it's easy to do.

I think I'm going to make it tonight with some flounder.
 
is there a quicker way to finely chop an onion other than cutting in into quarters, then chopping and chopping until it's in small enough chunks? that seriously takes me like 10 minutes per onion. would putting it into a food processor chop it up too much?

i have to know because i'm going to be on iron chef next week. thought i might save myself 5 minutes per onion if possible. you only get an hour ya know

I took some creative license on what I used: sweet onion, garlic, salt, pepper, fresh dill, fresh lemon juice, sprinkle of suger, fresh spinach and some rice.

yes, use a steak knife or other serated knife, I can chop an onion in about 10 seconds, therfore am 60 times better than you
 
i'm using a big ass steak knife, mr. glowing orb on the head. i guess i just need to get my technique down. 10 seconds is pretty impressive.
 
After you cut in half don't cut off the very end the onion so you have something to hold it together.

Or go to one of those as seen of tv sites and get that plastic chopper thing for onions, veggies, etc.

good for you.......did you sprinkle the sugar to soften the bitterness?
