Not sure what this muscle is called, but you all know the leg muscle I'm refferring to...what is the best exercise you have used that promotes the most size?

well full olys style squatrs, knees going forward, rock bottom frontsquats - all of tehse better with heel raised oly shoes

Also bulgarian splitsquats, splitsquats, stepups, making sure knees go forward etc
 
Try doing torture squats. Elevate your heals about 3 inches (it's best to stand on a sloped board). Squat all the way down and come up but stop short of lockout at the top. Your knees stay bent a little at the top, keeping tension on the quads. Do sets of 20 reps with a good cadence (ie not pausing at the top). Your quads will scream.
 
Check with the shadow on this, but I am sure that he will tell you leg extensions with your toes pointed out, along with squats, and hack squats.
