Substitute for brown rice?

I just don't have the time to make it! What can I substitute in for brown rice? I need a substitute for a cup of brown rice for 2 out of 6 meals. Also, it needs to be relatively easy to prepare.

(For time, think of the amount of time is takes to BBQ chicken. Around that area.)

Why don't you cook a large swag of rice in advance and keep it in the fridge?

I actually tried that and the rice just loses it's flavor in my opinion. It's not so bad, but it's just not something to look forward to. It's like oh man, I have to eat the rice. I know that sounds immature, but why do something you don't like when there's other options?

And the oats don't sound so bad, I have them for the first meal, but I enjoy them. Thanks guys.
 
Of all the options mentioned, pasta is probably the quickest to cook. Just make sure you measure portions. You could also try steaming or microawaving sweet/white potatoes. Should take around 5 minutes at the most.

Oats and rice take around 40 minutes to cook and beans and lentils need to be drained for a few hours before boiling, so I agree that they are inconvenient.

Personally, I don't mind rice that has been reheated (a bit of pepper, garlic, onion and sea salt and it tastes great!), so IMO that's the best way to go.

You can expedite oats by buying quaker whole rolled 1-minute oats, take about 5 mintues to cook up. Lentils don't need drained or soaked like beans, all they need is abou 15-20 mins cooking time.

I never gave lentils much thought either. I'm going to have a fun day at the supermarket tommorow. I'll throw you some karma for that.

Oh, right. I forgot about the 'quick' oats. I'm so used to the 'steel-cut' oats (that take longer to cook) that I have forgotton about all of the other types.
 
Cook two weeks worth of rice, pearl barley and quinoi on a sunday. Cooking, bagging into portions and getting in the freezer will take you a total of an hour and about 10 minutes of your actual labor.

As far as flavor, there are loads of threads around here on how to get your FULL MEALS in line, on the mark and in the freezer for A WEEK in less than two hours time.


If you cant spend an hour a week on your diet... er... fuck that: YOU CAN.

Try using some low sodium chicken broth to cook the rice instead of water. It gives it alot better flavor. Or like Chef said, mix in some barley and other grains in with your rice and it will get alot better taste-wise.

i usually boil the chicken, and drain it to get that gooy shit out and then re-boil and add chicken broth. Taste good and its like eating chicken noodle soup without the noodles lol. But i dont drink the broth afterwards too much sodium for me :chomp:

My favorite no-time-to-cook complex carbs: canned kidney beans (rinsed to get rid of the nasty red gunk). Perfect to throw into a salad with some hard boiled eggs.
