I've been wanting to squat all the way down as opposed to just past parallel. Seems like it'd be more satisfying, but I'm worried about "excessive glute hypertrophy" (fat ass) :P. Does this happen?
 
No. You'll get a muscular ass. Not a fat ass.

Sit around all day eating chips and dip with cookies, ice cream, and milk. That's my personal favorite diet for getting a fat ass and feeling better when you lose your girlfriend.

it's probably gonna grow whether you go to parallel or lower.
best bet for minimising glute involvment is front squats
 
I've always squatted ass to the floor, and I went from having no ass to a decent one, so I think its an old wives tale.
