My chiropractor avoids manually adjusting necks, he primarily uses percussion tools, either a small "clicker" or an electric thumper thing. He has to do a manual adjust on mine once in a while when it goes out very high up (like C1 or C2) he can't get it to shift any other way.
You really should at least check out specialty pillows. I really think mine has stabilized my neck a lot (I have no lordotic curve in the cervical spine as well as DJD):
