Dont believe everything you read. THe whole GI thing is kinda screwy in my mind. It assumes that the food they are rating is the only one being eaten. For example if u have a steak and a baked potato you wont have that huge insulin spike beacuse the fat slows the absorption of the potato, the slower the digestive process takes place the less spike you have. Stick to complex carbs, you know what they are.
