Guys in terms of GI and nutritional value. How does Rye bread & pumpernickel stack up against Wheat? Bascially, what I"m saying is Rye or Pumpernickel ok to eat?? Or does it have too much processed things in it?
 
Depending on the manufacturer of the finished bread product you can expect to find the following GI and Nutritional values. White bread has the highest GI rating of the three and is also high in sodium and sugars. A general rule is that the whiter a food is, the more processing it has undergone.

- Wholemeal rye bread 41 - 66
- Light rye bread 68
- Wholemeal bread 57 - 65
- White bread 69 - 87
