It's extremely versatile. For a quick side dish I just boil with with a touch of garlic, butter, and some Real Salt. If I'm looking to make a full meal I get a lot more fancy. After cooking it with some traditional mexican seasonings I've integrated in into a lot of homestyle mexican dishes.
If you like Mexican food, but don't know how to cook much you could keep it simple and just added cooked, seasoned quinoa to enchiladas or burritos along with a meat filling. It doesn't go so well with black or pinto bean filling though.
