Quinoa recipes?

I like adding some lowfat parmesan cheese and a little olive oil. You can also make it extra cheesy for the kids. I'll even eat it in the morning with a little low fat milk (My husband doesn't like this though).

Yum. We just bought a big tub of good parm cheese for a recipe last weekend. I'm going to have to try that.
 
I make this sweet potato coconut quinoa soup. Amazing and clean. Here's the recipe, roughly:
- two medium/large sweet potatoes, cooked and mashed well.
- two cans of coconut milk
- 1 cup of quinoa, cooked
- 1 tablespoon of cayenne pepper
- 1 teaspoon of chili flakes
- seasalt and pepper to taste
Mix this over medium high heat until well blended. If you like a thinner consistency, add broth of your choice. I also like to throw veggies in there, like baby corn, water chestnuts, mushrooms, and red peppers. It makes for a yummy thai spin.
