Question on fish oil/omega 3s

Can someone explain to me why bottled fish oil goes rancid at room temperature yet cooked fatty fish still provides the many benefits of omega 3s?

Isn't that like saying why does meat left at room temperature spoil, but when you cook meat it doesn't go rancid?
 
No, because meat at room temperature goes rancid because of bacteria, not because of heat... right?

I hear that fish oil is highly reactive and should not be heated or taken out of the refrigerator for too long, but the oil in cooked fish is apparently okay? This doesn't seem to make any sense.

All oils go rancid eventually, not just fish oil.
