Post workout eating

I know youre supposed to get good amounts of carbs and protein after one worksout. however, I see some body builders eating sweetarts and stuff after they workout. So whats the deal? is it because they ar replacing their glucose levels? What happens if you do not replace your glucose levels? And eating high glycemic carbs after working out, is it because it gets into your b;loodstream a lot faster and replaces the loss? can soemone help me get this straight?? thanks guys

You are asking way too many things in one answer I cannot sum them up.
#1)they eat sweetarts, well that's their choice, some people are willing to be unhealthy or fat
#2)you can eat them too, but a control substance shake would be a much better choice
#3)If you do not replace glucose? that's not a possiblity unless you're in deep ketosis...otherwise, your body can supplement by using proteins for breakdown into glucose
#4)Yes, HIGH GI will spike the blood sugar faster, so it a sense the insulin response will increase the glucose/dl level in the blood stream
#5)I would recommend you stick w/ a post-workout protein shake along w/ some moderate amounts of dextrose
