Seriously, the best place to ask this is the diet forum but I'm going to guess it's an unusual term for monounsaturated fat, since they are "more simple" than polyunsaturated fats, but let's hear from someone who's sharper about nutrition.

I doubt distingsions between simple and complex fats are often made because they all take an extrodinary amount of time to digest and process compared to carbs so the same issues don't exist when consuming them....

Ive never heard specifically of "simple fats", but i know the main difference among fats is the extent of saturation of the chemical bonds in the fatty acids.
