My Calphalon (expensive) frying pan is really starting to piss me off, everytime I do eggs in it...

What's the secret or...?

What pans have you had luck with?

Honey, trust me on this, TOSS NONSTICK! I've been a wife and mother since 1984, up until the late 1990s I went through a set of cookware every so many years. I've even tried that glass crap :rolleyes: Always the same story, works great the first few times, then NO MATTER HOW you wash it care for it, baby it, you start getting little black flecks as the teflon starts flaking off.

The last time I got completely disgusted it was a Calphalon set, as a matter of fact, LIFETIME nonstick pffffffftttt! I got TRULY P.O.'d.

I decided to do something entirely different, I got GOOD quality stainless steel, no regrets. I'm still using the same pots and pans nearly 10 years later, I've never been able to say that about teflon.

I have a frying pan that I use EXCLUSIVELY for eggs, it works better than any teflon I've EVER used. You do have to season it a bit (heat the pan up, coat the pan with oil, sprinkle salt on it, slap the lid on and take it off the heat, let it cool down naturally, then wipe it out with a papertowel, try to avoid washing the pan altogether), and NEVER use anything but wooden or silicon tools. The other trick, use slightly lower heat. But really, I can put just a pinch of oil/butter in that pan, crack an egg into it and most of the time I can slide it right out.
 
I agree with muscle mom. Get stainless with copper bottoms. They last better and have better heat distribution than the aluminum with nonstick. I can't stand black flakes in my food!

Mine don't have copper bottoms they have a different metal core, so the bottom is pretty thick. Heck, I just went to the website, they don't even MAKE the pots I have anymore ... the company now only carries nonstick pans :rolleyes: Guess they wanted more return business :lmao:
