Making my own mayo

i'm interested in making my own mayo. Anyone have an good reciepes for me. I'd like to make one with lower fat than store bought.

you're in for some fun! :rolleyes: do you have a recipe if you do please post it.

mayo is not easy to make!
here is a tip-add the oil in by drops at first or it will NEVER emulsify :)

Actually making it is quite easy, but you are right in the fact that you must add the oil slowly. Another thing I should mention is that you MUST refrigerate this immediately, and it only keeps for about 3 - 4 days. So you can't make a ton of it and use it for a while; just make what you can use for the next few days. Freezing it will ruin the consistency.

frankenfurter- read your recipe looks good

but you missed one key ingredient- dry mustard this is what stabilizes the emulsification :)

add 1/4 teaspoon per cup of oil
