I don't pick Tampa that often, but when I do I smoke people.
Defense:
From the 4-3, take Derrick Brooks(#55, ROLB) and line him up right on the line or slightly back, right next to the defensive end. As soon as the snap goes, jam the turbo button and rush him in on a slightly arched route to the qb.

The x's in the diagram are the d line and the pattern you should rush in. SACK CITY! He'll kill the run too unless they go to the other side.
You can run it out of the Nickel too for tighter pass coverage. It's good to the LOLB on the otherside in a blitzing formation which adds pressure for the rollout and will also contain the run to that side, Lynch is the Strong Safety on this side and will cover the slack. I saftey blitz is also very effective, but should'nt be overused because you can get burned.
Don't use Sapp! The computer will play better with him than you can. Don't use any d lineman. Blitz the backers or select a pattern where they read the play before making there move. For instance in the nickel you can select cover 4 and the 2 linebackers in the middle will show up like this on the play screen
X X (no coverage routes) they will hang around and read
instead of a coverage play which will show there route like this

Offense:
FULLBACK. Establish a running game and utilize Alstott. FB's are underused in Madden. FB leads and a FB dive out of the pro formation works nicely. Pull wr's,te's, or Warrick Dunn for added blocking. Don't overuse this cause people catch on quick. Don't be scared to run to the weak side of the field. Throw some passed to Alstott too. Your FB isn't covered as much as the HB for passes.
Use the goto guy on playcalling and select Keyshawn Johnson. Pick the slant pattern for him. He justs slants infield. Like below. (the pattern slants in more than I can draw on here.)

X (Johnson)
It's good for a first down and more if he can break it across the middle.
TIGHT END. Singleback formation or goto guy and select the play that sends the tightend on a straight fly route.

Easy yardage with the tight end who is rarely covered good. You can throw it under and get the yards if he is covered, Or if you have a fast TE he will outrun the LB for big yardage.
Keyshawn isn't that great and they cover the flanker the most in the game so hit Jaquez Green, who's lined up at the other side, deep in a fly.
Tampa Bay is one of the best teams ratings-wise in the game.
