If you could give to a charity, which one would it be and why?

There are too many to really pick just one. Anything that wasn't faith based would be ok with me, preferably something humanitarian that provides things like food or medicine for those who would otherwise not get it.

I do give to charities (both secular & religious), but not for tax purposes. I'm rather disorganized and probably couldn't track down all of the receipts even if I wanted to take all possible deductions.
