So I could demonstrate to all of my EF bors and orbettes on the proper way to roast a chix(kitchen slang for chicken). This bird is a marvel of sustenance, delicacy and taste. UMMMMMMMM.......as I look at it goosebumps cover my entire body. The skin is so crispy it's ready to crack.

Hook a bor up with a good brine technique and recipie. I can't seem to get it nailed down consistently...either it doesn't make any difference, or the chicken comes out tasting like a salt lick.

I don't brine the chix before I roast it. In fact, I've brine chix maybe five times my whole life. If you want to know how to roast a bad ass chix, I can certainly help. :Chef: :tuc:

People come from yards around to devour my roast chicken. I have to slap them away and find them chores while the meat is resting.
