No offence, but sencha green tea isn't the greatest.
I know this sh**, trust me.
LOW TEMP (150 not 212) SHORT BREW (1-3 min.) otherwise it gets bitter,
and you burn off all the good properties.
When you see "froth" on top - you done good.

You don't really drink it for the taste, at first.

The "purist's" who are all about the ritual, aren't too keen on mixiing.
Those two are the highest quality, best health properties choices.
They are both the same plant, same bush basically, just prepared differently.
The silver needles are just picked and steamed a bit, to stabilize and stop fermentation. The gyokuro is also first pick at springtime, but two weeks before
harvest, some shade cloth is dragged on, and the leaves turn DARK green.
When I order some grades from Japan, the smell of thr tea is just like walking behind a grass mower. The price is absurd, but the stale stuff in stores, and extracts are almost worthless, IMO. 6 years ago I had a large mass around my jugular vien. (got radiation)
I spent a fortune on antioxidants. The doctors said it was a waste of money, only good for prevention, not cure. Green tea was the only antiox that DID NOT LOOSE
