Hummus

I probably already know the answer to this because anything that tastes this good can't be good for bodybuilding, but is this true?

peanuts are to peanut butter

as beans are to hummus?

Is hummus just mashed up beans? why does it taste SOOO good and I think it is made with olive oil? Why couldn't hummus be a good carb source? I'm sure there is a reason just making sure.

Thanks!

I am pretty sure that Hummus is Chick peas and some type of oil along with spices..... That being said I don't think peas are as good of a carb source as beans (I really don't know about chick peas though, I am only familiar with green peas)

Really? I found this:

"Garbanzo beans, also known as chick peas, are considered a low glycemic carbohydrate food. Low glycemic carbs are most valued as they release sustained energy to the body and keep insulin levels steady. Unlike most carbs, the chick pea does not cause a sudden high and low of insulin. This "rollercoaster" tends to make us hungry too soon after eating.

In addition to the garbanzo being called a low GI food, it is a also good source of iron and protein.

The chick pea is higher in fat than most beans. The measure approximately 12.1 grams per cup compared to 0.9 g for the kidney bean in equal measure. "

Thanks, now let's keep figuring this out because I haven't found a reason to not eat it yet!

Works for me, I think the term pea confused me a bit, so it is the same thing as garbanzo bean, huh nice. Something has to be up though, nothing delicious can be acceptable..... It is so funny how I have conditioned myself to be overly critical of anything with a taste I enjoy.

Me too. I am always searching but whenever I post a possibility ilke this I always get shut down somehow by the smart people.

The only thing I can think of is the oil content must be REALLY high, but I'm not afraid of fat from olive oil so if that's the only thing then I'm about to go buy about a half a pound tub

I have called on chef obiwan to come to this thread but he isn't online right now

i make hummus all the time - many types contain olive oil, but others have tahini. tahini is made from sesame seeds and it's also quite fattening.

it's not a bad thing to eat, the main problem is eating too much!

You know you can make Hummus yourself without the tahini. Tahini IS very fattening but I'm not sure whether they are good fats or not.

Put into a blender or food processor 1 can garbanzos, drained; seasonings (salt, pepper, garlic, lemon juice), olive oil & a little red wine vinegar....blend up. Hummus!

You can use it instead of mayo on sandwiches (if you eat them) or on toasted pita breads/tortillas or crackers or dip veggies into it (pepper slices, zucchini, etc)

I love you, and shak! :p

If either one of you could give me a link to a recipe, or specific amounts of each of these ingredients to put in the blender, I would love you even more.

Also would like to see if anyone knows more about whether or not this Tahini stuff is good or bad fats.

k hummus is traditionally made with garbonzos/chic peas, fresh garlic, olive oil, tahini, lemon juice and cumin
i add alittle cayenne/harissa to mine
tahini is sesame butter very rich very beneficial source of fats
omega 6 and 9 i believe
enjoy it occasionally as prescribed above remember if you use it as a dip think off all that fiber offsetting the fat
but remember it is not a bad thing
look in my yummy thread
i did mention it
and chefwise added his two cents to it

variations
add roasted pepper
add artichokes (good for the liver)
add basil
i make mine spicy both with a hot spice but with lots of fresh garlic
trick is to have enough lemon juice in it
greatest compliment i ever had was from a lebanese grandmother that asked me for the recipe since it was better than hers
lol
i make it in batches starting with a number ten can
lol
makes a gallon

For you:

Hummus with Raspberry Vinegar
from Cooking Light

Raspberry vinegar gives this hummus a little kick, but you can use any kind of vinegar you have on hand.

1 tablespoon olive oil
1 1/2 cups diced onion
2 tablespoons raspberry vinegar (or red wine vinegar)
1 (15 1/2-ounce) can chickpeas (garbanzo beans), undrained
1 tablespoon chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon coarsely ground black pepper
1/4 teaspoon salt
Cilantro sprigs (optional)

Heat oil in a nonstick skillet over medium-high heat. Add onion, and saute 5 minutes or until onion begins to brown. Add vinegar, and bring to a boil, and cook 2 minutes or until vinegar evaporates. Cool to room temperature.
Drain chickpeas through a sieve over a bowl, reserving 1/4 cup liquid. Place chickpeas and chopped cilantro in a food processor, and process until mixture resembles coarse meal. Add onion mixture, 1/4 cup reserved liquid, cumin, pepper, and salt, and process until smooth. Garnish with cilantro sprigs, if desired.

Yield: 2 cups (serving size: 2 tablespoons)
