First things first, do you not want to go because you don't want to go to the party or you're not interested in her? I'm assuming the latter. Just tell her that you appreciate the invite, but that you're going to have to pass. Tell her you're not interested or tell her you don't like Christmas parties. She may have just been inviting you because she needed a date and may not even be interested in you, although that could be a blow to your ego. Just think about her motives before you say no. It might actually be fun.
