Take the knife and slice along one edge. The peel should open up for you to pull it off.

Are they green or dark yellow (almost black)? I love the green ones fried with a little salt sprinkled on them.

Oh, yeah its ripe. And a lot easier to peel than the green or dark yellow ones. In fact, you don't have to slice the edge that deep to get the skin off.

When they turn black they are VERY sweet. They don't require that much oil to cook them. In fact, I spray them with Pam and bake them.

I like to have those for breakfast with eggs.
