High GI food => medium GI dish

Let's take some high GI carbs (white rice, white bread)
add good fats, fiber and proteins (casein + whey)

the result is no longer high GI

But is it medium or quite low GI ?
 
baahh.. i dunno? sounds like it should be medium GI.. I wanna say something about processed sugars... crap. you got me.

I'll wait for someone who really knows what they're talking about to answer.
 
It becomes a LOWER Gi... but the resulting insulin spike is actually longer lasting than if one were to eat just the carb dish... I'm not sure if this is for better or worse, but I always like to add some fats in there.
