Glycemic Index, WTF?

Have you taken a look at this thing? Table sugar and potatoes are close to each other WTF? I thought sugar would be 100, and potatoes like 20, how do they classify these?
 
potato is basically a pure simple starch and hence has a dramatic effect on blood sugar levels due to its ability to spike insulin quickly.
If you want to lower the GI of a potato, eat the skin along with it. The fiber will mediate blood sugar somewhat.

It's largely a bunch of bullshit for us average folks who don't have diabetes. Since eating protein or fat with any carb will lower the insulin spike. I knew a guy that ate taco bell every day and was ripped. He was on deca and took in less calories than he burned. Don't need a glycemic index for that.

BTW, what's the glycemic index for large bags of chips?
 
They measure it by taking a blood sugar reading from people in controlled experiments after consuming said foods... that's how it started at least. I'll bet they have devloped tests since then that can measure what the theorectical GI will be without using a human anymore..

However... altough it's better to consume foods that won't spike your blood sugar when eaten by themselves on an empty stomach... the GI index pretty much goes out the door when you consume said carbs with fat which throws the GI into slow-fing motion.. which is good...

Look at peanuts on an index.. it's cause the fat content.

Don't eat a potato by itself... put a tablespoon of smart balance on it. You get good omega3 fats and you make the sugar absorbtion into your blood stream nice and steady.

Of course... you might want to spike your BS like right after a workout with creatine to shutttle that shit to your muscles.
