Freshest sushi you can get

I just thought about something when we were in Costa Rica last week. They offered a deep sea fishing excursion which we didn't get to go on but I talked with several people who did. They were catching sailfish, mahi, and tuna. When someone caught a tuna, they fileted it up right there and had wasabi + soy ready for ya. They said it was the best sashimi(sp?) ever. I now wish I would have gone

I did that in Mexico. You catch your fish, then walk into pretty much any restaurant and hand it to them and they'll do it up for ya. Best food I ever had on vacation - Mazatlan.

you should refrigerate it to firm the meat up if you are going to eat it... i hear this can actually kill some of the possible parasites as well. I've known some sushi places to sear it then cut off the ends as well to prevent illness... I myself, however, am not a sushi chef.
