So damn cliche, but nothing beats a great NE Clam Chowder on a fall afternoon. It is that much better when you have to drive for an hour to get to some hole-in-the-wall old rickety joint in an unknown neighborhood where all the original owners actually still live and summer rentals from NY and CT are nonexistent.

KillahBee, the girls in your avatars are always gorgeous... although I'm not particularly fond of the girl on the left in your avi, too much makeup. The one on the right is pretty though :p

Thank you, I try. Sometimes I like to throw up a typical plastic surgery, drowning in make up coke loving club chick, hence the girl on the left.

LOL! that's hilarious.... i wonder what she looks like without all the makeup...? She's not badlooking, just has too much caked on her face... she'd probably look better with less... or she'd be one of those girls who when she washes her face you don't recognize anymore! LOL

My favorite soup is from a little place I just adore-- wild rice duck. It's utter heaven. Creamy wild rice soup is wonderful in general but the duck really adds an extra something that is so comforting and complex...it makes me want to weep. lol

I love duck! Magret is one of my favorite things in the world. Warm confit.. mmmm... rich, salty... sexy as all get out.

I simply don't treat myself to it on a regular enough basis... tell me about the meat in the soup: is it diced? shreded?

Forgive me if you know, I always assume too much: do you know what 'confit' is?


Weep: g'head, make fun of me, but there are foods that invoke enough emotion to make me weep, and that is not a pretty picture.

I ate a She Crab soup in Mytrle Beach SC a few years ago..Then I called and got the recipe. It was in a 5 gallon pot and I followed the recipe to the t, then doubled the amount of crab meat....It was great...use a little sherry and nutmeg on top Im tellin' u ...I luv cookin' then eatn' !!!
 
I don't know what 'confit' means Chef. The duck is shredded. It really gives a lovely flavor. It seems like most wild rice soups have chicken in them-- and the chicken doesn't really add much.

I can hook you up with some recipes, its a way of preserving and slow cooking the leg meat to make it very tender, very rich and ooooooo yummy.

Chicken can be thing of beauty, but you are right as can be: duck has a thousand times more spirit, more layers.

I did a smoked duck consomme for a while.. time to bring that back. Wild rice would be the perfect addition.

No worries, raina. It's real easy and the cooked leg meat will last for a month or more in the fridge and indefinitely frozen, you can really do a world of stuff with it. I will dig a recipe out of the vault tonight. Are you allergic to any foods? I can customize to suit.

Im a sucker for Potato Soup......has to be prepared so thats it thick.....stir in some mixed cheeses, add some hickory smoked bacon, parsley.......

Creamy thick with button mushrooms, but not to many shrooms. damit chef, i want some soup now and have no means of getting any!

bacon... potatos.... my oh my... that is one of those naturally mind blowing combinations....

just as a change of pace, the SECOND time we make that soup.. could we skip the cheese? how would you feel about some melted onions or leeks in there? big soft sweet cloves of roast garlic? Just to expand upon a really great theme.

You cool with that? Would you be willing to try it?

Yeah - I left out the seasonings...garlic def....fionely minced onions would rock

thanks for playing along, shaddow, this is something I need to suss out...

are we talkin' a very 'hearty' almost stew like combo here? smooth potato based soup, with small diced roasted potatoes, add that nice carmelized potato extra to it, onions, big sweet cloves of roast garlic, diced hickory (or apple?) smoked bacon...

... i dont want to fuck this up by complicating it too much... but are you into fresh Sage? we will finish this bugger off by a small spoonful of creme fraiche on the top and sprinkle it with fresh sage...

add some of that uber chewey large 'crumb' double sourdough ficelle or sourdough baguette... and are we ready for lunch!?!?

I agree with Killah

Nothing beats a NE clam chowder at the shore when its brisk out.

I also really love Lobster in the orugh for the same reason. Just always makes me feel good somehow.

I laos love some hot coffee sitting on the breakers in a storm with the waves crashing below you, just feet away. Nothing seems significant in comparison

I love zupa ogorkowa: pickle soup

My Dad always made split pea soup. No one in the family ever ate it except for me...it tasted good to me and I thought that it was disrespectful to my Dad to not eat what he had spent hours preparing.

Also, I love making soup.

If you had all afternoon to do nothing but listen to music and make soup, anything, what would you make?
 
soup is awesome

NE clam chowder held the #1 spot until i had lobster bisque a couple of years ago.
after clam chowder i'd say french onion soup followed by corn chowder and then gumbo. i had some turtle soup down at the gumbo shop in n'awlins earlier this year that was excellent.

lol. I am not good with descriptive story telling..

but anyway, it was green pea. My Dad always used a ham hock. It was really delicious. Then I would bake bread for all of us, but usually just him and I would end up eating it. My Dad is a good cook. Believe it or not, he made most of the meals in our family and I learned a lot from him from a very young age. I was making quiche lorraine at 15...lol.

But for the bread, I made sourdough because that is my Dad's and my favorite (lol). We are very close.

chowda and bisque screams out my childhood, I am with on that 100%.. I was an onion soup fanatic as a kid... the cheese had to be just right, not too much, not too caramelized... funny, I havent thought about that in years.

K to you for a rich memory, holmes.

Corn and scallop chowder is a summertime staple at my house, truely a sweet gift from nature, totally.

tell me about your corn chowder.. when and where? restaurant or family made? what do you eat with it?

Good for you, you foodie! Mushroom barley.. hell yes, I had my Wild Mushroom and Barley Stew in the Sunday Times Magazine... everyone has their 15 minutes, right?

We have similar food thoughts: i do a butternut soup every year on the saturday following thanksgiving, use the turkey stock as the base. My sweetness of choice is Maple Caramel from our own trees, but I LOVE honeys.. pinch of cinamon and a healthy pinch of cayenne are the predominant flavors.. makes me think thick woolies and boots and hay rides with the kids. Very good times soup.

I buy a rotissrie chicken and throw it in a pot of water and slow cook that till everything falls off the bones. then we clean out the bone stuff and then throw in a bunch of veggie and noodles.

Hmmmmmm good soup.

I have always been a soup fan. My current favorite is from a little Irish pub a few blocks from my house. They serve an excellent Italian Wedding Soup with a little Irish twist to it. I have to get the recipe. It is spicey and sweet and is the perfect food in this cold Wisconsin weather. For an everday soup, I like a good brocoli and cheese or a corn chowder. And if I don't have time to make my own or go out, a can of Campbell's Beef Pasta used to hit the spot. Too bad they don't make it anymore.

Well. it varies a lot.

I mean we don't have a pat recipie for chicken noodle veggie suprise. :) LOL!!!

We just go for either spicey that clears your sinuses or spicey that makes your eyes water and comes close to being chili. LOL!!!

Big chunks of oblique cut carrots cellery and, for me anyway, vidalia onions.

oooooo... sage and bayleaf... copious amounts of black pepper works for me in a big way too.....

Oh and veggies...whatever is in season. We tend to buy from this local guy who has a produce store.

I am in Madison. The Italian Wedding shoup has a very thin consistancy. The base of this places soup is a chicken broth. It has spicey Italian sausage style meatballs, spinach, parsley, Percorino Romano cheese, garlic, salt, pepper, paprika and some little noodles. There are probably other ingredients, but that's all I can figure out easily. They serve it with a very crusty, dense sourdough. My bro in law works there now, so I will try to squeeze the actual recipe out of him soon.

damn that sounds good... the sausage has some fennel seed it to it? that with the parsely and garlic and romano has me ready to eat. right now.
