Exercise or nutrition fields

I am re-thinking my position on heading to college in the pursuit of an English Major. I hear nothing good about the jobs available to such a graduate, and I must admit a bit of anxiety because of that. I can always minor in English and still pursue my dream of becoming a published author as a hobby. (albiet an important hobby)

I have to be reasonable about my intelligence. No Ph.D in Mathmatics or Physics for me, nor do I feel that at my age I would be able to do remotely well in such a field.
So I am thinking perhaps a B.S or a Masters in some exercise related field.

But what sort of field is it best to tailor a college education for? Kinseology? Exercise physiology? Physical Therapy? (sports therapist) I am not exactly sure I would have what it takes to get a job as a Strength trainer, and I want something a bit more economically feasable than a Personal trainer (of which I hear the good ones only make about 15k a year)

What about a degree in Dietics, a nutritionalist perhaps? Anybody have any Idea what all these respective fields gross? Personally I would be happy with 30-40k a year. :) Not looking for lots of money, just a career I love. (Ya know, the factory life just plain blows)
