In Korea they beat the dogs before killing them. I was told the adrenaline rush from the beating makes the meet more tender.
Once of the most traumatic experiences I had was in Vietnam in the late 1980's. I went to the open meat market. They keep the animals alive until you make your order (back then they didn't have refrigeration.) At first, I saw a slaughtered bull, which was very interesting. Down the street they had dogs in cages, ready for sale. I had to leave immediately.
