Try locating a few AADE (American Association for Diabetes Education) books and check it out. It has everything your friend will need to know.

look up dan duchaine and dr. mauro dispaquale. you may not care for their research, but their references and sources used are what could help you out

I have all sorts of hookups and AADE information/cookbooks laying around, hit me up if you would like me to scan/send you anything. I'll look for a web page to see if you can sign up for free subscriptions to these things.

also Lyle McDonald use to run some good low carb Anti-Diabetes sites

Can he not just go to nutritionist and ask for guidelines about what he should and not eat.

Your husband is 170 years old??

sorry. I had to do it.
I'd have him ask his doc. And go to the local book store- there are whole sections of cookbooks just for this.. its not just carbs that are bad, but white carbs.

Is he insulin dependent? Becoming insulin resistant? What? For most diabetics there's no limit on how many carbs they can eat as long as they take enough insulin to compensate. I think anyone can get away with eating 2grams per pound of bodyweight. i.e., 340g.
