Does anyone have a smoker?

I know pick3 smokes poles but I'm talking about a meat smoker. I just got a kick ass brinkman smoker last night and want to do some damage on some carcasses tonight. I'm looking for some good recipes. Here she is

My FIA has a huge home-made one. It's about 7 feet tall and wider than a fridge. He's a butcher and cooks all sorts of stuff in there. He's divorced now and left it in the X's garage to collect dust. It weighs about 400 pounds. Just a guess.

It actually has a chimney to it too. It was built right through the garage ceiling from the top of the unit. Good times.

How much does that brinkman go for?

Only around a hundred. I was actually surprised at that price. Your friends smoker sounds intense!

I had to wait like 4 months for recipes from afeedz, so don't get your hope up
 
but you don't have to put them to bed at night, and wake up from a sound sleep at 2am to rock them back to sleep. good thing i am getting through that stage

You need to set hours or a day aside to smoke something. If you want something quick you can set one up on your stovetop that will infuse smoky flavor but won't cook things through. Brisket, pork butts, and chicken are probably the best things smoked. Just mix up a simple dry rub, apply generously, and put them in there for 13-18 hours depending on the size of the butts and briskets, 5-6 hrs for the chickens. 225-250 is the ideal heat for all. Salmon or trout are good too and take less time.

I actually do end up with them in the middle of the night depending on the situation they're in, but not daily, no.

...but mine won't grow out of it. As some leave, more come. :( Sad.

That's exactly what I ended up doing. I got a nice dry rub on some halves of chickens, soaked mesquite/pecan chips and added garlic and onion to my steaming water pot. Holy hell the smells coming off this thing are amazing. Good looking on the temps btw
