Diet Help!!!!!!!

We are very serious about making HEALTH and FITNESS a way of life.
Our stats: Dean 5'8" 155 lbs
` Carol 5'1" 95 lbs
We are concentrating on our overall fitness now instead of just weight. Carol is even smaller than before she had our 2 children and I lost 30 lbs last year on a 60 carb a day diet. My goal is to lose another 2 inches off my waste while building muscle mass and Carol wants to lose her little pooch in her lower stomach and tone her butt. :-) I am looking for good muscle definition but am not trying to get HUGE like a lot of the guys here. We are working out 5 days per week. We take lots of vitamins that our chiropractor helps us with. I take "ripped fuel" before we work out and I take a protein drink afterwards. The drink is a Vitamin World Knockoff of a Twin lab product. I love it but only have a month of it left and they stopped making it. A suggestion on a replacement would help also. I just started having oatmeal for breakfast because I got to lazy to make eggs every morning. I eat one plane mixed with one flavored. We are reading the article George sent me when I joined the site and our workouts are already more effective. We are really excited about that but a really big problem we have is that we don't have much knowledge about good dieting habits. We also have two children to feed so some of the "balls to the wall hard core" diets are not realistic to us. I am enclosing pics of us so you can see where we are coming from. I feel good about the weight that I lost but hate the fact that I have so little muscle mass. Any help you can give in the way of proper dieting (or anything else for that matter) would be greatly appreciated
