does black pepper dry out food when you cook with it

i baked chicken peas and potatos in the oven for about an hour. seasoned with black pepper, and oregano.

the chicken was a lil dry, was i supposed to use broth?
 
Nope, pepper won't dry out food. Chicken is easy to overcook. Was the chicken in pieces or whole breasts?? If in pieces, an hour is way too long...

Another tip: don't add salt while scrambling eggs, the salt make 'em rubbery...

And another tip: Put an orange or lemon peel in your garbage disposal to help the scent in your kitchen.
 
Did you cook it covered or uncovered? What temperature? More likely than not you overcooked it or even cooked it at a temperature that was too high. One hour at the right temperature and covered shouldn't dry it out.
 
it was 3 breasts cut in half, and uncovered. i should have cooked the poatos first then added the chicken. ill do that next time

Yeah for breasts cut in half an hour is way too long. Plus if your baking chicken it's going to be pretty dry no matter what unless you cook it in something.
 
Next put your veggies and chicken in the pan, cover it with aluminium foil, and bake until your chicken's juice runs clear at 350 degrees. Poke it with a fork to find out. It should take 45 minutes or so. If you don't overcook chicken it won't be tough and dry.
