cooking healthy and delicious fish for non chefs

you want to fillet the fish first off. either catch the fish or buy the fish from the store, bring it home and fillet it. look on youtube on how to fillet a fish, its really easy.. OR you can buy the fish already filleted but don't expect it to be as fresh as catching your own.

next you put the fillets into a square glass container with aluminum under (to make cleanup easier) then squeeze 2 fresh lemons with 3 tablespoons of olive oil, mix them up and put them into the container.. add potatoes, carrots and whatever other veggies you want to add.. cover up the top and let it sit in the fridge for 3-6 hours letting the fish marinade in it. the oil from the fish will mix with the lemon and olive oil and make a very healthy and natural marinade.. much healthier than the salt and sugar laden marinades that restaurants use.

then you put the container into the oven at 360 degrees. cook for about 75 minutes or until the fish is slightly golden brown. you can tell by the juice being evaporated if you are over cooking. you don't want all the juice to be gone or you have overcooked. but then again you don't want to undercook either.
 
You can also make a sandwich out of the fish. What I do is I mix tomatoes (cut in chunks), minced garlic, minced onions, sliced jalapenos or green pepper, salt and pepper to taste. Spread them on top of half the fish. Put the other half on top so that it looks like a sandwich.Sprinkle the fish with salt and pepper. I tie them together with a string although it's optional or wrap it with foil if you want to eat it with the juice and all. Bake or grill.
 
Just checking...you marinade for 3-6 hours with the potatoes, etc?
