Cooking chicken breast

For a tasty steak you need a very hot pan

I don't know if it is related to the Maillard reaction but a steak cooked at low temp is just not good

What about chicken breast ?
 
if you cook anything at low temp be prepared to cook it all the way plus
chicken breast.. no
likes to grilled/sauteed/broiled
can be poached with good results for chicken salad

as for beef get a cheap cut such as short ribs and cook em slow and well with flavours they can absorb



with more expensive cuts grill em on high heat with a bit of olive oil, sea salt and black pepper
cook em rare to med rare and enjoy

was busy this week serving up a bit of elk
