What are your views on pork? what combos of foods would you have with it? which cuts? how would you cook them chefwide?

Pork. so many different kinds of pig around around the world... so little time to eat them.
The best pork I have ever had was some boar from a friends ranch that is fed entirely on chestnuts and wild Thyme. Un-fucking-real.
However, this is WAY too broad a question. I could write reams of paper just on chops alone....
Ok, here is a quicky.
Double cut chop "larded" with raw garlic and sea salt, then grilled, served on a pile of wood grilled grannysmith apples, melted maui onions and maple glazed cubes of 'green' bacon and toasted Pecans.
Try taking the edge off some of the sweetness with a salty Verjus (non-fermented juice from unripe green grapes, has a killer VERY tart acidy flavor, like vinegar but MUCH MUCH better for this, as it doesnt fight the other flavors)
