we (my buddy and i) were up till 4 am working on our second patch of beer, since we got a late start.
we made a cherry wheat beer from both whole grain and malt extract (over 7 lbs worth), cherry extract, and whole cherries.
this is going to have to do two rounds of fermentation, so we can kick the alcohol content up. after that, i am going to rack it twice (to get it as clear as possible), and then prime it for at least two weeks.
then it will be all yum-yum in my tum-tum.
our first batch (an irish stout) is currently being racked. it will be another two weeks before we will drink it.
i already sampled it while while we transferred it into another carboy, and it wasnt half-bad...considering it had not been primed or underwent second fermentation.
beer brewing is pretty damn cool.
