Classy Skank
You can use this on nachos or as a salsa for grilling chicken!
1 Can Black Beans, drained
1 handful FRESH Cilantro,rinsed,drained and chopped
1/2 red onion, chopped
1 jalapeno pepper,seeded and chopped
1/4 C. Olive Oil
1/4 C. Red Wine Vinegar
1 T. lemon or lime juice
Lemon Pepper to taste
Dash Cumin
2 oz. BAKED Tortilla Chips
(you can warm the bean salsa in the microwave if desired)
620 Cals., 25 g. protein, 85 g. carbs., 20 g fat.-this is with using the BAKED tortilla chips)
I also use the bean recipe as a sauce for my chicken - Place the chicken and bean sauce in TIN foil and throw it on the grill!
