I use 2% cheddar, you take a hunk and put it on a plate microwave for 2min. or so.You want the cheese to kind of get crunchy like, but still pliable. When its done it resemble a thin cracker, and you can pour a lot of the fat off and still have the protein. Any way I top it with chicken and salsa, or whatever. Its like a tortilla.
