antioxidants from fruits and veggies?

While on a CKD, most people seem to get the majority of their vitamins and minerals from supplementation. However, most multimineral/multivitamin supplements don't contain "complete" forms of various nutrients. for example, most supplements that contain vitamin E only contain 1 of the chemicals, whereas there are actually 8 chemicals that make up natural vitamin E. I know there are a lot of high fiber vegetables that one can eat while on a CKD, but what about fruits?? Are there any forms of fruits one can purchase that don't contain fructose but contain the vitamins and minerals? Somehow I'm doubting it, but I thought I'd throw it out there. Aside from that inquiry, does anyone have any input about the best way to ensuring you're optimizing your vitamin/mineral intake? Any specific supplements? Thanks again
