Another veggie besides broccoli...

What's another good vitamin rich veggie to have with grilled chicken/fish besides broccoli for a cutting diet. My g/f can not eat broccoli and spinach. How about stringbeans? She likes them.
 
tomatoes (rich in lycopen + vitamin A) ?
 
Carrots are a good one. Tons of vitamin-A, and a smattering of a few of the rest. And they're fairly filling, and tasty.

They cook well with most foods, too.
 
There aren't too many carbs in tomatoes and carrots? I'm looking for something she can eat on a daily basis for dinner. Thanks!
 
Well, technically, and it's probably not what you're looking for, but Yams/sweet potatoes/potatoes are considerd as root vegetables....

tHERE IS PEAS, LETTUCE, BEETS, CAULIFLOWER, pumpkin, green peppers,...hell, I don't know what she likes. Go to the grocery store and find stuff.

Also, is she on a Keto type diet because you mentioned..."There aren't too many carbs in tomatoes and carrots?" Can you elaborate on this a bit, and also, why can't she eat broccoli, etc...?

How about some zuchinni or other type of squash- add a little cinnamon and some I Can't believe Its Not Butter spray- it tastes great!!
 
Question regarding carrots ? Basically carrots are a high GI carb. Up there with white bread basically. I thought the goal of the low carb diets was to stick with the low GI carbs..which happens to be dark greens. I eat green beans mostly on my (CKD)..and lima beans for my carb up days. i also eat them after my workouts and the fat is coming off really fast. I stay with low GI carbs and all is fine. if I add a high GI carb then blah. What works for me though may not be the same for everyone else though.
 
trunip greens....mustard greens .....both with vinager is a great low carb veggie for night meals when getting ready for a show......but remember we don't eat for taste...WE EAT FOR RESULTS! So she might have to pinch her nose to down certain foods :spit:

carrots are only high GI when cooked. They do have sugar in them however.

You could eat some Asparagus which taste awesome just steamed. Spinach is good. You want to stick to mostly green vegies. Brussel sprouts are alright if you cook them right. I love my brocoli- add some Fat free cheese on top and a couple tsp of Udo's oil- good shit.
 
Dude, just about any vegetable is good. I never eat just one type. You need to mix them up, because they all provide different vitamins and minerals. The only ones you have to be careful with are peas and carrots. They tend to have a bit more carbs then most veggies out there. They are still good though, just don't eat a ton of them.
