If you're getting after it pretty intensely then it's definitely cardio. If you want to prove this, take your pulse after about 5 minutes of pounding and you'll see. I was working a bag and jumping rope for 2 years but stopped because I coudn't put any mass on.
How about the carbs? I believe making wraps yourself with fresh ingredients would be much better. There are many oat/whole grain/soy/rice wraps available these days that are healthy and tasty.
