I've actually done this 2 different ways. Either way you really have ta beat the egg whites for quite a while, maybe 2-5 minutes w/ a mixer, just until the whites become thick (stiffened)
while mixing add 2 packs of Splenda and 1/2 tsp. of vanilla

I always do what teresand77 mentioned. I microwave, peel, then mash'em. Mix in just a lil' low cal/sugar free Log Cabin syrup, 1 pack Splenda, some cinnamon and they taste almost like the sweet potato casserole you have at Christmas.
